Chocolate Chip Cheesecake Bars (cookie dough tub)

INGREDIENTS:

1 package (8 oz) cream cheese, softened
1/2 cup sugar
1 egg
1/2 cup coconut, if desired
2 cups Pillsbury® refrigerated chocolate chip cookies (from 5-lb 4-oz container)

DIRECTIONS:

1. Heat oven to 350°F. In small bowl, beat cream cheese, sugar and egg until smooth. Stir in coconut.
2. In ungreased 9- or 8-inch square pan, break up half of cookie dough. With floured fingers, press dough evenly in bottom of pan to form crust. Spread cream cheese mixture over dough. Crumble and sprinkle remaining half of dough over cream cheese mixture.
3. Bake 35 to 40 minutes or until golden brown and firm to the touch. Cool 30 minutes. Refrigerate at least 2 hours until chilled. For bars, cut into 4 rows by 4 rows. Store covered in refrigerator.

Neiman Marcus Delicate Lemon Squares

Ingredient

1 cup Flour
1 Stick butter
¼ cup Confectioners sugar
2 Eggs
¾ cup Sugar
3 tablespoon Lemon juice
2 tablespoon Flour
½ teaspoon Double-acting baking powder
Additional confectioners sugar

Preheat oven to 350 degrees. Blend 1 cup
flour, butter, and 1/4 cup confectioners
sugar until the mixture resembles cornmeal.
Pat the mixture into an 8" square baking pan.
Bake at 350 degrees for 12-15 minutes or
until the mixture is pale golden.
In another bowl, beat eggs until light and
lemon colored. Beat in sugar and lemon juice.
Continue beating 8 additional minutes.
Sift in 2 T flour and baking powder.
Stir until well combined. Pour lemon mixture
over baked layer. Bake in 350 degree oven
for 20 minutes or until golden.
Sift additional confectioner's sugar over
top of dessert. Let cool. Cut into squares.

. Easy Cream Cheese Bars

2 tubes crescent rolls
2 8 oz pkgs cream cheese
1 C. Sugar
1 tsp. vanilla

place one tube of crescent rolls on bottom of 9x13 pan. Spread out and
pinch together perforations. mix cream cheese, sugar and vanilla together and
spread over crescent rolls. Place second tube of crescent rolls on top..just
unroll..do not pinch together.
melt
3 T. butter and brush over top
then mix
3/4 C sugar
1 tsp cinnamon
and pour over top
bake at 350 degrees for 30 min.

Keep covered in fridge.
These are SO GOOD and easy!

THE ULTIMATE BROWNIE



8 1 ounce squares of unsweetened chocolate
1 cup butter
5 eggs
3 cups sugar
1 tablespoon vanilla
1-1/2 cups flour
1 teaspoon salt
2-1/2 cups chopped pecans or walnuts, toasted
PREPARATION:
Preheat oven to 375 degrees F. Grease a 9 x 13 pan.
Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed.

FABULOUS PECAN BARS

1/2 cup Butter -- cold
1 1/2 cups Flour
1/4 cup Ice water

Filling

1 1/2 cups Light brown sugar -- packed
1 cup Butter
1/2 cup Honey
1/3 cup Sugar
1 pound Pecans
1/4 cup Whipping cream
Use a pastry blender to cut butter into the flour. Mixture should resemble cornmeal. Add water and toss with a fork. Gather dough into a ball. Wrap in plastic wrap and refrigerate for 1-2 hours.
Butter and flour a 9x13" pan. Roll dough out to about an 11 by 15 rectangle. Fit dough into the prepared pan and let it come up about an inch on all sides. Pierce dough with a fork. Chill while making the filling.
Preheat oven to 400°.
Combine brown sugar, butter, honey, and sugar in a heavy saucepan and bring to a boil over medium heat, stirring constantly. Boil until thick and dark, 3 or 4 minutes. You must stir constantly. Remove from the heat. Stir in pecans and cream. Pour over dough in pan. Bake 25 minutes. Check after about 15 minutes. If the filling is browning too much, reduce oven heat to 375 degrees and continue baking. Cool cookies in the pan. Cut into strips.
Makes 5 or 6 dozen.

PECAN PIE BARS

1/4 - 1/3 c. white sugar
1/2 c. butter
1 tsp. vanilla
1 egg
1 1/2 c. flour
1/4 - 1/3 c. brown sugar, packed
1/4 - 1/3 c. corn syrup
1 tsp. vanilla
2-3 eggs
1 c. broken pecans

1. Mix white sugar, butter, vanilla and egg.
2. Stir in flour. Mix well.

3. Press dough in the bottom and 1/2 inch up sides of ungreased 9x13 pan. Flour fingers if dough is too sticky.

4. Bake at 350 degrees for 10-15 minutes or until edges are browned.

5. Combine brown sugar, corn syrup, vanilla and eggs. Beat well.

6. Stir in pecans.

7. Pour over crust.

8. Bake at 350 degrees for 25-30 minutes or until set. Loosen edges from side of pan while warm. Cool completely. Cut in bars. Cover and refrigerate bars.

This is my substitute for pecan pie.

CHESS PIE BROWNIES (Shiloh United Methodist Cookbook) From Our House to Yours.

2 cups brown sugar
1 stick margarine
2 eggs beaten
1 t. vanilla
1½ cups all purpose flour
2 t. baking powder
1 cup chopped nuts
dash of salt

Melt margarine & sugar together. Let cool, add eggs,
vanilla, salt, baking powder, flour and nuts. Pour into
a greased, floured pan and cook 35-40 mins. @ 350º.

White Chocolate Cranberry Bars

1 1/2 cups all purpose flour
2/3 cups granulated sugar
1 cup soft butter
2 eggs (beaten)
1 can sweetened condensed milk
1 cup dried cranberries
1 cup white chocolate chips
1 pkg sweetened frozen coconut
1/2 cup semi sweet chocolate chips (optional)

Mix in food processor or large bowl, flour and sugar. Pulse or cut in butter to form fine crumbs.
Press firmly into 13x9 baking pan. Bake in 350 º F oven for 12 minutes, until lightly browned.
Mix together in large bowl, eggs and sweetened milk. Stir in white chocolate chips, cranberries
and coconut. Pour over crust; bake 20-22 mins, until done. Drizzle melted chocolate chips
over top. 50 squares.

Caramel Date Bars with Cranberries and Walnuts

1 cup cranberries
2 tablespoons Plus 1/2 cup sugar, divided
2 -1/3 cups flour, divided
2 cups rolled oats
1/2 cup packed light brown sugar
1/2 teaspoon baking soda
1 cup butter, melted
1 -1/2 cups chopped dates
1/3 cup walnuts, chopped and toasted
1 cup caramel ice cream topping

PREHEAT oven to 350ºF. In small bowl, combine cranberries and 2 tablespoons sugar; set aside. In medium bowl stir together 2 cups flour, oats, 1/2 cup sugar, brown sugar, and baking soda. Stir in melted butter, blend well. Reserve 1 cup crumb mixture. Press remaining crumbs in bottom of 9x13 inch baking dish. Bake 15 minutes. Sprinkle dates, walnuts and cranberry mixture evenly over crust. Stir together caramel topping and remaining 1/3 cup flour; drizzle over fruits and nuts. Sprinkle with reserved crumb mixture. Return to oven for 20 minutes of until lightly browned. Cool. Cut in squares.

Chocolate Coconut Bars

4 cups crushed graham crackers
1 cup softened butter
2 cups shredded coconut
1/2 cup powdered sugar
1 (13 oz.) can evaporated milk
1 tsp. vanilla extract
1 cup slivered almonds
12 oz chocolate chips

Preheat oven to 350º F. Mix graham crackers, butter and powdered sugar. Pat into the bottom of a 9" x 13" pan. Bake 10 minutes. Mix coconut, milk, vanilla and almonds. Pour over crust and bake 10 mins. at 350º F. In a double boiler over low heat melt chocolate chips and spread on top of bars. Cool. Cut in squaresss. Makes about 2 dozen.

1 box yellow cake mix
4 eggs
1 box 10x sugar
1 stick melted butter
1 8 oz. softened cream cheese

Cream cake mix and butter with one egg.
Press mixture into 9 x 12 baking dish, firmly.
Combine cream cheese, 3 eggs, sugar. Pour
over crust and bake. 325º for 35 minutes.
Cut in squares.

4 cups peeled, sliced medium apples
2/3 cups brown sugar
1/2 cup flour
1/2 cup rolled oats
3/4 tsp cinnamon
3/4 tsp nutmeg
1/3 cup soft butter

In 8 inch round glass dish arrange apples. In mixing bowl blend remaining
ingredients until crumbly. Spread on apples. Microwave (high) 5 - 6 mins,
rotating 1/4 turn halfway through cooking.
Serves 6 - 8
